2. Open Shelf Cooking
Place the dried piece (or pieces) on a stainless steel rack and place in the preheated oven at 820°C / 1500°F *. (*) Wait for the oven to come back up to your target temperature and start timing your cooking for 30 minutes.
When cooking is complete, take out the piece, place it on a heat resistant surface and wait for it to cool down or much better, immerse it in water while it is hot. (**) Most of the firescale (oxidation layer) will fall off the piece. If any remains, leave it in hot stripping solution for a while, then rinse with water.
(*) Most ovens are coldest near the front door, so I placed your pieces near the back of the heating chamber.
(**) Be careful with water vapor.

Once the flame and smoke are gone, begin heating the piece on full power until it reaches a red-orange color and continue to fire for at least 5-10 minutes, carefully watching that the piece maintains this red-orange color all this time. time. for 5-10 minutes depending on the size of the piece. Avoid melting. After cooking is complete, let it cool down or soak it in water. Leave the fired piece in the hot Picklean® solution to remove any firescale (oxidation layer), if any.
